Meat or Pork or Chicken or whatever

recently, i've been translating a japanese menu into english (for the restaurant i work at).
the restaurant is a yakiniku place so the menu mostly has the parts of a cow as the name of a dish. カルビ into bone-less short rib, ホルモン into organs.
translating all this is ok, fine, sure - but memorizing it is just...
all the staff already had to memorize the whole thing in japanese, but now in english? please.
but we have to do it anyway, since we're paid for it :P
